Who loves Billy’s Bakery, raise your hand? Last week, I had the opportunity to interview Bel Torres-Scariff, the head baker of Billy’s Bakery. It was so much fun learning all kinds of fun tidbits about Billy’s Bakery.

Billy’s Bakery is famous for their highly reviewed desserts. Among many celebrities, Billy’s is also Katie Holmes favorite bakery & cupcakery. Katie insisted on having Billy’s Bakery make her & Mr. Tom Cruise’s wedding cake. Don’t we all wish we had a Billy’s Bakery in their city?
Q: How did you begin working at Billy’s Bakery?
Q: As the Head Baker of Billy’s Bakery, you are in high demand. What is the most amount of hours per week you have worked during the holiday season?
Bel @ Billy’s Bakery: Along with being Head Baker, I am also the Production Manager. Almost everyone works full time hours with occasional overtime to get us through the intense weeks like Thanksgiving and Christmas. On average, I would say I work close to 45 hours per week… Which in perspective, is not too bad.
Q: How many Bakers work at Billy’s Bakery?
Bel @ Billy’s Bakery: We have 8 trained bakers, 3 of which also do part time decorating shifts, in addition to 2 more full time cake decorators.
Q: Have you invented any special desserts / recipes at Billy’s Bakery?
Bel @ Billy’s Bakery: I take no full credit for any of our items. I only take credit in the discoveries and tweakings of some of them; such as The Chocolate Cherry Cake, Brownies, and Butterscotch Gingerbread Cookies!
Q: What’s your specialty talent?
Bel @ Billy’s Bakery: I really love Cake Decorating and Pie making. It’s really my specialty and favorite thing to do.
Q: Which dessert is most popular at the Billy’s Bakery?
Bel @ Billy’s Bakery: Cupcakes of course! Also, the yummy Icebox Cake, which is built of Freshly Whipped Cream and Old Fashioned Chocolate Wafers.
Q: Billy’ Bakery is a favorite of many celebrities such as Katie Holmes, Ethan Hawke, Mandy Moore, Blake Lively, and Bungalow 8 Club founder, Amy Sacco. Can you tell us about other fun experiences with Celebrities & Billy’s Bakery?!
Bel @ Billy’s Bakery: I have seen all these celebrities and more walk through our doors and it’s always a treat. I love that they love our product! I have seen so many celebs come in that I can handle myself calmly. If I had to pick one who left me very starstruck, it would have to be Kate Winslet. She came to our Chelsea store location. I don’t think the counter staff employee assisting her recognized who she was. All I heard was, “I would like one pink cupcake please” and I knew her voice! I looked up, straight away and was thrilled. In case you were wondering, I didn’t say anything… I admire from afar.
Q: What is something a lot of people do not know about Billy’s Bakery?
Bel @ Billy’s Bakery: We have three locations! Many only really know about our Flagship Chelsea Store. I base most of my time in our Tribeca location which has been open for about 3 years now. We also have our Nolita spot which opened early 2011.
Q: Any exciting upcoming news about Billy’s Bakery?
Bel @ Billy’s Bakery: Most definitely! We are hoping to launch new fun cupcake flavors like Almond Cupcakes with Pistachio Frosting and Chocolate Cherry Cupcakes with Ganache Icing. We recently added a funky Billy’s delivery truck to facilitate our delivery service, which we only began this year! You can see our little van buzzing around all over the city. I even caught sight of it while walking around midtown on my day off and thought it really cool.
