Fresh Winter Fruit Cake with Caramel Glaze

Day Light Savings time has ended, the evenings are getting darker and chillier, and for some folks there is already snow on the ground.  Leave it to Rachael to dream up amazing comfort foods…and desserts!  It’s time to cozy up to the fireplace with a slice of this Fresh Winter Fruit Cake with Caramel Glaze from EveryDay with Rachael Ray. This cake uses readily available winter fruits of bosc pears and cranberries with the warmth and kick of a Jack Daniel’s infused caramel glaze.  I’m ready to get snowed in (with a full-pantry for baking!), aren’t you?  While this cake is festive and company fitting, it offers a simplicity in preparation and in decorating that allows it to find its way to your table after a wintry meal of pot roast and hearty vegetables.
