Chocolate goes with everything. But, much like the strawberry and the banana, mint and chocolate are a heaven-made match, satisfying in every season. Divine in cookie-form, delicious as ice cream, delicate in a truffle, and oh yes, marvelous as a cupcake. The Cookbook Queen of Confessions of a Cookbook Queen claims that making Mint Oreo Cupcakes is a perfectly ordinary thing to do. I have to say, Your Majesty, that I beg to differ. Making Mint Oreo Cupcakes is a fantastic thing to do! This recipe calls for a cookie in the bottom of the cupcake liner. Yum. I do agree, of course, that you might be unnormal if you don’t like these cupcakes.
