I’m in love! I was positively thrilled to find this blog post for Chocolate Covered Cherry Fudge by Fields of Cake! Having made chocolate covered cherries two weeks ago, there are two unsolvable problems: 1) totally disappointing to spend an afternoon making a candy that isn’t ready to be eaten for 2 weeks! 2) The chocolate ages while waiting for the fondant to ripen. In a single swoop, this recipe solved ALL my problems. I can make it and eat it all on the same day, enjoying the wonderful taste of a chocolate covered cherry with the richness of fresh chocolate. Didn’t I mention how in love I am???
