Gluten Free Eton Mess Dessert

 

 

I don’t have a gluten intolerance, but the more I learn about the harm too much gluten can do, the more I’ve tried to scale back the amount of gluten I cook with.  It’s not limiting really.  It can help you think in new ways about food and get creative instead of getting stuck in old habits.  This Eton Mess recipe from Gluten Free Day is a great example of a dessert that is delicious, sweet, cool and satisfying all without gluten.  It’s perfect for afternoon tea, as it might be served in Britain, or after any meal.  And all you need are berries, cream and meringue.
