Adorable is the first word that came to mind when I saw these Mini Oreo Cheesecakes by Sprinkle Charms! Cheesecake is a wonderful dessert to begin with, but the personal mini version is just too cute. The crust is simply an Oreo cookie that is placed in either a mini cheesecake pan or a cupcake pan. Crushed Oreo cookies are added to a creamy batter that is baked on top of the crust. One of my favorite things about this recipe is the whipping cream topping. Cornstarch, instant pudding mix, and unflavored gelatin are used to stabilize the whipping cream so these little cuties can hang out at the party without losing their fluff. Absolutely genius!
