Mini Sponge Cakes with Coffee Buttercream Frosting

How do you take your coffee?  With extra butter and sugar and a hunk of cake on the side?  Funny, I like it that way, too!  Great minds…These fabulous, Mini Sponge Cakes with Coffee Buttercream Frosting from  Spoon Fork Bacon have been drenched in coffee and smeared with an ever-so-rich French buttercream then sprinkled with toasted almonds.  Hell-ooo lov-ah!

While these may be the exact opposite of my regular “skinny lattes,” I think this coffee-filled indulgence will be well worth it.
