Even though I seem to eat freshly prepared cookie dough straight out of bowl, some don’t think that’s a good idea. Luckily, some incredibly clever people have been creating egg-free cookie dough recipes recently. I’ve seen so many great desserts using these recipes, from cookie dough stuffed cupcakes to cookie dough stuffed peanut butter cups. This recipe for Cookie Dough Cupcakes definitely fits in that category. Something Swanky serves up a cupcake with peanut butter and chocolate chips in the batter. Then, she tops them with a huge spoonful of her Cookie Dough Frosting. The ingredient list for the frosting is nothing shy of delicious, once you add the brown sugar, powdered sugar, oats, peanut butter, chocolate chips, AND M&Ms. Yep, I’m pretty sure I could safely eat the whole bowl.
