I made this colossal cake over the weekend for a group birthday celebration. I figured it was the perfect opportunity since it could offer something for almost everyone. I really only used the brownie and marshmallow frosting recipe provided here. I substituted ATK’s recipe for the ‘perfect chocolate chip cookie’. I used Annie’s Eats blog for her adapted recipe of ‘NY cheesecake’. I did use the instant fudge frosting for the filling layers but I thought it would be too sweet to frost the outside as well. Instead, I used BraveTart’s recipe for chocolate German buttercream. It really came together nicely since this buttercream isn’t too buttery or too sweet. It’s a custard based buttercream that tastes just like ice cream.
I had to weigh the cake when it was all said and done – 12.5 pounds of sweet sugary goodness. Since I prepped all the layers the night before I had enough time to let the finished cake sit for 12 hours in the frig. But I made sure to let it sit out for at least an hour before serving. It took some muscle to carve and started forming stress fractures from all the pressure! My layers were much thicker so it was difficult to slice up that perfect piece…it mostly fell apart onto each plate when I cut. But no one complained and it really seemed like a big hit. Everyone went home with leftovers!
I think next time I would try making a halved version. This could have fed 25 people easy considering most couples opted to share their plate! But this is a great concept cake when you want a crowd pleaser/show stopper. Thanks for sharing!
