Last summer, when I saw the final installment of the Harry Potter series in theaters, I cried. I felt, and many other people did, like I had lost a best friend. As Kristin from The Pastry Affair put it, “Though I knew this day would come, I find I’m not ready to say farewell. I want to hold onto the magic just a little bit longer.” So when I saw these Butterbeer Cupcakes I was, of course, instantly in love. Not only were the cupcakes delicious and moist but they were magical. They provided the cupcake equivalent of all those long talks over butterbeer, all those snowy nights of adventure, and sitting in the Gryffindor common room by the fire with Ron. The cupcake is “essentially a brown sugar cupcake infused with cream soda and butter flavors,” but the real star of the show is the butterscotch buttercream on top that is drizzled with butterscotch ganache. Yum! I plan on making a whole batch of these and settling in for a HP marathon, but I could see these yummy treats moonlighting at a Harry Potter themed party or providing the perfect companion to rereading your favorite series. Just make sure not to get frosting on the pages!
