Inspired by the desire to take one of her favorite treats, cheesecake, on a picnic, Diane from Created by Diane came up with these Cheesecake Cookies. These fluffy, cake-like cookies contain cream cheese as well as cheesecake flavoring, and are topped with a sweet, cream cheese frosting that is dipped in graham cracker crumbs as a nod to a traditional crust. I love the idea of making cheesecake easily portable, and they would also be a great way to get a cheesecake fix while using portion control!
