Donut Butter and Jelly Donut Mousse

Prompted by a challenge to incorporate a junk food item into a gourmet meal, Faith at An Edible Mosaic zeroed in on an old standby: donuts. Using Speculoos cookie butter as an inspiration, she created Donut Butter. The finished product has flavors of almond, coconut, vanilla, spices, and of course, sour cream donuts, which are the star ingredient. Since coconut oil is used as the base, the butter has a range of textures depending on temperature, and  can be use in a lot of applications, from a simple spread to a syrup-like topping for breakfast. One of the most exciting uses Faith came up with for her new creation was what she calls Jelly Donuts, Reinvented. She created a mousse using cream cheese and the donut butter, and topped it off with some homemade raspberry sauce. The recipe was a hit with her young niece, and is sure to satisfy any jelly donut fan.
