Fluffy Strawberry Vanilla Cupcake

With summer just around the corner, those of us on the East Coast get particularly excited about things like strawberry season. There is something wonderful about local, freshly picked strawberries, and adding them to desserts like these Fluffy Strawberry Vanilla Cupcakes by Chop, Stir, Eat is a great way to enjoy them. The fact that these cupcakes have been described by some as “angel food cake” is the reason I want to try them.  A light and fluffy cupcake with finely chopped strawberries baked inside is topped with a whipped frosting made with butter and confectioners sugar.  What a fresh and fun dessert to look forward to!
