These Chocolate Ganache Tartlets with Muscat-Poached Peaches from Life is Great are absolutely beautiful! A poached, ripe peach drenched in reduced poaching liquid is perched atop a dark chocolate ganache tart with a pâte sucrée crust. The visual result is stunning as is the flavor, I’m sure. The already ripe peach is infused with the flavors of sweet Muscat wine, orange, and cinnamon, making it even more succulent. The ganache is also infused with Muscat, so the flavor runs throughout. This tart is full of refined flavors, and is something I’d be proud to serve to company.
