These Dark Chocolate Cupcakes with Peanut Butter Mousse Frosting are the prettiest things I have seen all week. The treats, which come from the Bakers Royale blog, pay homage to the time-tested pairing of peanut butter and chocolate – but with a twist. The peanut butter mousse used on the cupcakes isn’t just your standard peanut butter frosting. It is lighter and fluffier than any peanut butter frosting you’ve had before because, instead of using gobs of butter or cream cheese, this recipe uses whipped cream. The cupcakes aren’t your average chocolate cupcake, either. They utilize sour cream and bittersweet chocolate to somehow manage being light and dark at the same time. This recipe is a new spin on a classic pairing, and I couldn’t think of a more perfect cupcake recipe to present to you right before Father’s Day.
