Do bakeries put their real recipes, their bread and butter, into their cookbooks? Jessica of Portuguese Girl Cooks wondered this as she was baking this Red Velvet Cupcake recipe from Georgetown Cupcake (featured on the TLC show DC Cupcakes). Having never been to the bakery, she couldn’t compare her batch to the real thing, but she was underwhelmed. She liked the amount of cocoa powder, and the color they turned out to be, but she found them to be a bit dry. However, she discovered the next batch was improved quite a bit by using buttermilk instead of milk. It’s still unsure whether the Georgetown Cupcake girls shared their true recipe, but either way, there’s now another good recipe for red velvet cupcakes on the web.

I don’t think they give the right recipes if they said put milk in it instead of buttermilk because the unique taste of red velvet is the cocoa powder with the buttermilk.
also, I tried making the lemon cupcakes from their book and they were horrible, but I ordered cupcakes from their shop (shipping was outrageous) and the lemon cupcakes from the shop was okay, but the texture was totally different from the texture from the book..
So I don’t believe they would share their true recipe, like you said it’s their “bread and butter”
