Gluten Free Lime in the Coconut Cupcakes

Somehow the fact that coconut flour existed had eluded me right up until I saw this Lime in the Coconut Cupcake recipe from The Wannabe Chef. I really cannot help but feel a slight sense of loss for what I’ve been missing out on. And while I don’t specifically seek out gluten free recipes, I do love that they have become a much larger part of the food blogging community, and great flavor combinations like this make it easy to want to dive into the gluten free world!
