Lemon Cupcakes with Raspberry Curd Filling

Berries in the summer are refreshing and so delicious. Add them to a lemon cupcake recipe, and you’ve given me a reason to bake. These Lemon Cupcakes with Raspberry Curd Filling from Smells Like Home seem to be a wonderful mix of tart and sweet, making for a perfect summertime treat! The cupcakes are made with one of my favorite ingredients, fresh lemon zest, which is a great start. Add some homemade raspberry curd, and they just get better. And as if that combination doesn’t make you weak at the knees, check out the ingredients for the lemon buttercream frosting that tops them off! Lemon zest returns along with heavy cream, butter, and confectioners sugar. I don’t know about you, but I’m sold!
