The idea of enjoying a mimosa sounds inviting on a nice day. Bake one into a cupcake and throw in some strawberries and suddenly, I’m paying close attention. These Strawberry Mimosa Cupcakes from Oh My Veggies seem to be the perfect blend of so many wonderful things. Orange zest, champagne, and sour cream are a few of the ingredients that are baked into the cupcakes. A filling made with fresh strawberries, champagne, and sugar is carefully tucked inside. It’s all topped off with a cream cheese frosting that has a hint of orange zest and strawberry filling mixed in. Sounds like the perfect complement to that mimosa we were about to pour…the champagne is open anyway, right? Cheers!
