My favorite ice cream in the whole world used to be Ben & Jerry’s Chunky Monkey… used to. That’s until I became a health conscious bride who was concerned about the effect said ice cream would have on my waistline in an all white dress. But thankfully, Monique at Ambitious Kitchen has answered my banana-ice-cream prayers with a treat that is by far more healthy, and more tasty, than any Ben & Jerry’s flavor – her Banana Ice Cream with Toasted Coconut, Almonds, and Dark Chocolate. Monique makes her banana ice cream by simply freezing bananas and pureeing them in a food processor. After that, she mixes in (or tops! Whatever you prefer!) toasted coconut, almonds, and dark chocolate chips. Super easy to make and good for me? I am so in.
