We’re so thrilled to be sharing this Peanut Butter Cup Cookie Pizza with you today! Cookie pizzas are a fun way to combine all of your favorite childhood flavors. Personally, I’ve always been a peanut butter cup fan. And because of this love for the peanut butter and chocolate combination, putting twists on recipes using the ultimate duo is always fun.

This pizza is a giant chocolate cookie topped with the fluffiest, creamiest peanut butter frosting I’ve ever had. It’s topped with chopped peanut butter cups and mini marshmallows. I often add peanut butter cups to my s’mores, so the peanut butter and marshmallows seemed like a logical pair. To finish it off, add a chocolate chip drizzle. You can even divide the dough into small pizzas and set up a topping bar. That way, everyone can add what they want, especially if you have peanut butter haters. Yes, they do exist, but that just means more peanut butter cups for me.

Peanut Butter Cup Cookie Pizza

Makes 8 servings (1 slice per serving)

You’ll Need:

For the Cookie Crust:

  • 1 1/4 cup flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 egg

For the Peanut Butter Frosting:

  • 1 cup powdered sugar
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • Pinch of salt
  • 1/4 cup creamy peanut butter
  • 2 Tablespoons milk

For the Toppings:

  • 1 cup mini peanut butter cups, chopped into pieces
  • 1/4 cup mini marshmallows
  • 1/4 cup semisweet chocolate chips

Directions:

For the Cookie Crust:

  1. Preheat your oven to 350 degrees. Have a round ungreased pizza pan or pizza stone ready.
  2. In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the brown sugar and butter until light and creamy, about 2-3 minutes. Beat in the egg. Gradually beat in the flour mixture.
  4. Press the dough into the pizza pan. If using a pizza stone, pat the dough into a circle that is roughly 1/2 inch from the edge. Bake 10-12 minutes or until edges are firm. Let cool.

For the Frosting:

  1. In a large bowl, beat together the powdered sugar, butter, and salt until light and creamy, about 2-3 minutes.
  2. Add the peanut butter and milk then beat until light and fluffy, another 2-3 minutes.
  3. Spread the frosting evenly onto the cooled cookie.

For the Toppings:

  1. Scatter and gently press the peanut butter cups and mini marshmallows into the frosting.
  2. Place the chocolate chips in a small sandwich bag, but leave it open. Microwave for 30 seconds. Gently massage the chocolate chips in the bag. Microwave in 15 second intervals until the chocolate is completely melted.
  3. Push all of the chocolate to one corner of the bag. Cut a small hole in one corner of the bag and pipe the chocolate onto the pizza. Let the chocolate completely cool before serving.
