–1/2 teaspoon ground cinnamon
–1 tablespoon garam masala seasoning
–1/4 teaspoon cayenne
–8 tablespoons butter
–1 can tomato sauce (15-ounce)
–4 teaspoons ginger/garlic paste (found at Indian market)
–1 tablespoon tomato paste
–1  can diced tomatoes in juice (14 1/2-ounce)
–1 large onion, chopped (1 cup)
–1/3 cup heavy whipping cream
–1 pound chicken breast cut into bite-sized pieces
–1 cup plain yogurt
–1 tablespoon lime juice
–Salt and pepper
–Cooked basmati rice
instructions
  1. Cut up chicken breast into bite-sized pieces, and marinate with the plain yogurt, lime juice, salt, and pepper for at least 30 minutes (this will help tenderize the chicken).
  2. Cook basmati rice (2 cups water to 1 cup rice).
  3. Stir spice ingredients together in a small bowl, and set aside.
  4. For the sauce, melt butter in skillet over medium heat. Add the onion, and cook for 5 minutes stirring frequently. Add the garlic/ginger paste, tomato paste, and spice blend, then cook for 1 minute (stir to prevent burning). Stir in tomato sauce and diced tomatoes. Add heavy cream, bring to a boil, and then simmer.
  5. Cook chicken in a separate pan with a little cooking oil. Drain juices, add chicken to the sauce mix, and simmer for an additional 10 minutes.
  6. Serve sauce and chicken over rice.
