Today we’re so thrilled to have Lyndsay Sung of Coco Cake Land share a special treat with BFFF readers.  This recipe puts a sophisticated twist on the classic cupcake. Bright yellow cupcake liners offset this textured mauve frosting, and a single blackberry tops it all off for a dessert that really pops. These Blackberry-Topped Mauve Buttercream Vanilla Cupcakes are as fun to make as they are to eat!

BLACKBERRY-TOPPED MAUVE BUTTERCREAM VANILLA CUPCAKES

BLACKBERRY-TOPPED MAUVE BUTTERCREAM VANILLA CUPCAKES INGREDIENTS:

–1 1/2 cups all-purpose flour
–1/2 teaspoon baking powder
–1/4 teaspoon sea salt
–1/2 cup unsalted butter, room temperature
–1 cup of granulated sugar
–2 eggs, room temperature
–1 teaspoon pure vanilla extract
–1 cup of heavy cream

PURE VANILLA BUTTERCREAM INGREDIENTS:

–1 cup unsalted butter
–2 cups confectioners’ sugar, sifted
–1 teaspoon pure vanilla extract
–Touch of pink and purple gel food color

STEP BY STEP BLACKBERRY-TOPPED MAUVE BUTTERCREAM VANILLA CUPCAKES INSTRUCTIONS:
1. In a medium bowl, sift together the dry ingredients.
2. Using a stand mixer, beat the butter on high. Scrape down the bowl, and add the sugar. Beat on high until light and fluffy.
3. With the mixer on low, add the eggs and pure vanilla extract and continuing blending until fully incorporated.
4. With the mixer on low, alternate adding the dry ingredients and the heavy cream to the wet mixture. Mix on low for a minute until fully incorporated. Do not overmix.
5. Using an ice cream scoop, spoon batter into cupcake tins lined with baking cups.
6. Bake at 350 degrees F for 15 to 18 minutes, turning pans at the 10-minute mark to ensure even baking.
7. Once baked, remove cupcakes from pans, and set to cool on wire racks.
8. Make a buttercream frosting of your choice.
9. Using a piping bag fitted with a multi-opening tip, pipe upward strands of buttercream all over the top of your cooled cupcake.
10. Top each cupcake with a fresh blackberry.
