QUICK AND EASY (AND HEALTHY!) POPSICLE RECIPES

Can we all agree that sometimes life gets a little crazy and we find ourselves stuck in a rut? How many times have you planned on going to the gym after work, but instead found yourself on the couch watching reality TV with a pint of ice cream keeping you company? Um…GUILTY!

Well, we have the answer to part of this problem–healthy, yet yummy smoothie pops that will indulge your sweet craving and leave you feeling a little less angry at yourself! We’ve teamed up with food blogger Jessica Potts of A Happy Food Dance to provide you with some seriously satisfying popsicle recipes that are sure to become a staple in your weekly meal planning. Read on for Jessica’s tip, tricks, and delicious recipe:

“Are you as bad about getting a good start to your day as I am? And by good start, I mean a healthy yet filling breakfast. The snooze button always does me in, or walking the dog, or getting drawn into whatever is on TV. Really, I’m set up to fail…until a few weeks back when I started making a few smoothies every Sunday evening, popping them in popsicle molds, and then grabbing one on my way out the door.

Instant lifesaver! Plus, I’m not left with a dirty blender each morning to fuss over and there’s no dirty glass to deal with. Just a popsicle stick and I’m out the door.

Below are three of my favorite breakfast smoothie popsicle recipes: chocolate banana, blueberry oatmeal, and tropical green. All delicious and all packed full of super healthy fruits and veggies. You can make these uber healthy by adding a spoonful or two of flaxseed or even chia seeds.”

 

CHOCOLATE BANANA

Makes: 4 popsicles

Prep time: 5 minutes

Ingredients

  • 1/2 cup unsweetened vanilla almond milk
  • 1 tablespoon honey
  • 1 banana
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons almond butter

BLUEBERRY OATMEAL

Makes: 4 popsicles

Prep time: 5 minutes

Ingredients

  • 1/2 cup frozen blueberries
  • 1/4 cup old fashioned oats
  • 1/2 cup unsweetened vanilla almond milk
  • 2 teaspoons honey

TROPICAL GREEN

Makes: 8 popsicles

Prep time: 5 minutes

Ingredients

  • 1/3 cup frozen spinach
  • 1/4 cup frozen pineapple
  • 1/4 cup frozen mango
  • 1 banana
  • 1/2 cup unsweetened almond milk
  • 1/4 cup strawberries, optional
  • 2 teaspoons honey

Instructions

  1. For each popsicle, blend the ingredients in a blender until smooth.
  2. Pour into popsicle molds.
  3. Freeze until firm, about 6 hours.
  4. You may need to run warm water around the mold to release to popsicles.
