Smoothies can sometimes get a bum rap; commercially produced blended drinks can be full of added sugars and other unhealthy additives. But, when made at home, even something that sounds as decadent as Carrot Cake Colada with Whipped Coconut Cream can be good for you! Lauren of Healthy Food for Living whipped this up for a virtual baby shower for one of her blogging friends. Lauren concedes that the combination of carrot cake and pina colada flavors might seem strange, but this drink is both refreshing and “deeeeelicious!” Coconut milk, banana, pineapple, and carrot are combined with traditional carrot cake spices and topped with whipped coconut cream. Simply whip the cream, blend the other ingredients, and you have a healthy, vegan, and very tasty treat.
