I’m often asked the question “Can I use salted butter for baking?” While it’s a tough question to give a straight answer to, I’m going to have to stick with no. The issue with using salted butter in baking is that you cannot control the amount of salt in any given stick of butter. Whenever I say no to this question though, I often hear that many people use salted butter in their baking, that it’s the secret ingredient in Grandma’s chocolate chip cookie recipe, and I don’t doubt it. I believe that there are some recipes that call for salted butter and others that can be enhanced by it, but in a recipe that just calls for butter, your safest bet will be to forgo the salt and stick with standard butter.
