Tropical Passion Fruit Buttercream Cake

Today we are so thrilled to have Tessa of The Frosted Cake Shop bringing us a little slice of summer. School may be back in session and the leaves may be falling, but we still love to celebrate the bright, bold colors and flavors of the beach season! Here is what Tessa has to say:

There is nothing I can think of that I’d rather be doing than relaxing on sandy shores with the tropical breeze in my hair and a fruity cocktail in hand. Summer always inspires refreshing flavors in my kitchen.  And if you can’t make it to an island getaway, let us bring the tropics to you with this tropical cake!

My all-time favorite spring and summer flavor has to be passion fruit, and I have found an easy way to incorporate this tangy, sweet flavor into the most delicious buttercream ever.  Fill your favorite layer cake or top any cupcake with this Passion Fruit Buttercream, and you’ll be daydreaming of white sandy beaches.

I swear by The Perfect Puree’s Passion Fruit Concentrate.  I can usually find it at Whole Foods, but you can also purchase it online.  The concentrate sure packs a punch, but you can adjust the amount to your desired flavor.  At The Frosted Cake Shop, I typically add about three to four tablespoons of the passion fruit concentrate to one batch of Italian Meringue Buttercream.  The flavors work wonderfully with this Italian Meringue Buttercream recipe because the buttercream is still very light and not overly sweet. Add your passion fruit concentrate at the very end of mixing.


For this post, I created a small buttercream cake.  I layered vanilla butter cake with the passion fruit buttercream in between each layer.  Feel free to pair the passion fruit buttercream with any of your favorite cake or cupcake flavors.  Even chocolate cake makes for a surprisingly yummy combination!  I gave it a textured buttercream finish to match our relaxed, summer vibe.  To top if off, I added some bright gum paste hibiscus flowers complete with edible glitter.  Enjoy!
