Hey everyone! Alexandra here from Confessions of a Bright-Eyed Baker, and I’m really excited about the dessert I’m sharing with you all today. If you’re like me and already have a big list of things you want to bake in 2013, I have news for you: these Peanut Butter Chocolate Chip Bars need to be at the top! I know you guys are going to LOVE these bars. Not only are they a cinch to make, but they also taste heavenly! They’re rich, soft, and dense with sweet peanut butter flavor and chunks of dark chocolate. Can it get any better? I’m betting a lot of you are major peanut butter cup lovers (I am!), and this dessert is going to be right up your alley. Imagine smashing together peanut butter cups and blondies, creating an intoxicating combination of all of those deep, sweet flavors, and you’ll know exactly what to expect with these dangerously good dessert bars!

Peanut Butter Chocolate Chip Bars

Recipe adapted from Bake at 350, makes 16 bars


  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt or other course salt
  • 1 teaspoon baking powder
  • 1/2 cup peanut butter (creamy or chunky)
  • 6 tablespoons unsalted butter, softened and cubed
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup bittersweet chocolate chips, roughly chopped


  1. Preheat oven to 350° F and grease an 8″ square baking pan with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Using a stand mixer or other electric mixer, cream together the peanut butter and softened butter until well combined and light in texture. Add the sugars and beat in. Add the eggs, one at a time, beating between each addition until smooth. Scrape down the bowl after adding each egg. Beat in vanilla extract.
  4. Add the dry ingredients to the wet and mix in at lowest mixer speed until just incorporated. Add the chopped chocolate chips and fold in by hand with a rubber spatula.
  5. Transfer the batter to the prepared baking dish and smooth out the top with an offset spatula. Bake in the preheated oven for 35-40 minutes, until a toothpick inserted into the center comes out clean or with a wet appearance but no crumbs. You might be tempted to bake the bars longer, but don’t; they will set more once they cool.
  6. Cool the bars completely before slicing. Store, covered, in the refrigerator.
