I threw together this quick, healthy, and delicious mango chicken salad for a family dinner recently using Tyson® Grilled & Ready® Chicken, and it was a total hit! The fresh, sweet mango flavor shines through while complementing the grilled chicken breast beautifully. MANGO SALAD WITH TYSON GRILLED & READY CHICKEN

Makes 2 servings

MANGO SALAD WITH TYSON GRILLED & READY CHICKEN INGREDIENTS:

—4 ounces Tyson Grilled & Ready chicken

—4 cups arugula (about 2.5 ounces)

—1 mango , peeled and sliced into 1-inch pieces

—1 red bell pepper , trimmed, seeded, and sliced into 1-inch-long pieces

—1 tablespoon extra-virgin olive oil

—1/2 teaspoon balsamic vinegar

—2 teaspoon honey

—1 teaspoon Dijon mustard

—1/4 cup slivered almonds

—pinch of salt

MANGO SALAD WITH TYSON GRILLED & READY CHICKEN INSTRUCTIONS:

  1. Chop mango and red bell pepper into bite-sized pieces.
  2. In a large bowl, combine arugula, mango, bell pepper, and Tyson Grilled & Ready chicken.
  3. To make vinaigrette: In a small bowl, whisk together olive oil, vinegar, honey, dijon mustard, and a pinch of salt.
  4. Drizzle vinaigrette over salad, mix, and then sprinkle with slivered almonds.
