If there’s one thing we love here at Best Friends For Frosting, it’s cookies! There’s just something so special about home baked cookies, any time of the year. And what’s even better is when you spruce up a simple sugar cookie and turn it in to something gorgeous! Today, we’re thrilled to have Denell Pepin with us sharing this fantastic recipe for Watercolor Whoopie Pies. Here’s what she has to say:

MINI WHOOPIE PIE SUGAR COOKIES

ingredients

-Betty Crocker Sugar Cookie Mix

-1 Stick of Butter, softened

-1 Egg

-Betty Crocker Vanilla Frosting

-Betty Crocker Green Gel Food Coloring

1. Preheat your oven to 375 degrees.

2. Preparing the recipe is the easy part- simply combine all the ingredients into one large mixing bowl and stir until the dough is formed. Store the dough in the freezer for a few minutes to make it easier to work with.

3. To form the dough into the whoopie shaped cookie, simply take 1 tablespoon of the cold dough and form a perfect ball. For this just use your hands. This is a great activity for everyone to get involved in!

4. Once you have your mini cookies lined on your baking sheet, go ahead and bake them off for about 12-15 minutes. Be sure to watch the cookie closely and as soon as you see browning on the edges, it’s good to remove them from the oven. While your cookies are cooling you can prepare your whoopie frosting!

5. Add a few drops of gel food coloring in red to vanilla frosting. Once you add your desired amount of food coloring combine in a bowl. I added about 4 drops of food coloring to one container of frosting which offered up a soft pink color.

6. For a little styling bonus, I made sure to not over mix the food color and frosting – which gave a subtle ombre appearance. From there, I simply put the pink frosting into a freezer bag and trimmed on corner of the bag for piping.

7. Once the cookies have cooled, simply pipe pink frosting on one mini cookie, and sandwich it together with another!
