Pizza is one of those things that I can’t live without. I could eat it everyday for the rest of my life and that would be fine by me. However, that probably wouldn’t be the best idea for my sticking to a healthy diet…that’s why one of my favorite ways to enjoy my pizza cravings without going overboard on calories is to make pita pizzas at home! Pitas serve as the perfect base for any of your favorite toppings and end up being perfectly portioned pizzas for one person. These pesto pita pizzas make for the ideal spring recipe that tastes fresh while leaving you feeling satisfied and guilt free!
Pesto happens to be one of my favorite sauces to top a pizza with and it feels so seasonally appropriate with its fresh basil aroma and its vibrant green color! These pita pizzas are great for stress-free entertaining with no worries of having to bake the perfect dough. But whatever the occasion, these pesto pita pizzas are going to be your new favorite way to get your pizza fix any day of the week!
Pesto Pita Pizzas
4 Whole Wheat Pitas
1/2 Cup Pesto
1 1/2 Cups Fresh Basil
1 Tbsp. Pine Nuts
2 Garlic Cloves
1/4 Cup Extra Virgin Olive Oil
1 Tsp. Salt
1/2 Tsp. Black Pepper
1/4 Cup Parmesan Cheese
1/2 Cup Sun Dried Tomatoes, Sliced
1/2 of a Red Onion Sliced
5 Oz. Fresh Mozzarella Cheese
1 Tsp. Red Pepper Flakes
*Note: You can also buy already made pesto, but making fresh at home is my favorite!
- Preheat oven to 425 degrees.
- Make pesto by combining basil, pine nuts, garlic, salt, pepper, olive oil, and Parmesan cheese in a food processor.
- Blend until smooth and creamy.
- Spread pesto evenly onto each pita.
- Layer red onions, sun-dried tomatoes, and then mozzarella on top of the pesto.
- Sprinkle with red pepper flakes.
- Bake pita pizzas for 20 minutes until cheese is bubbly and pitas are crisp.
- Serve immediately.
