ADULT POPSICLES: THREE SUMMERTIME RECIPES

Today, we’re thrilled to be sharing three summertime recipes for the perfect adult popsicles. They’re just like a frozen cocktail, and in the dead of summer, that sounds like just what the doctor ordered. Carly and Amanda of The Creative Journal created three different flavors and combined them to create a great layered treat. Here’s what they have to say:
“Summer equals ice blocks, and these adult only versions are sure to be a big hit at your next party.  They are great to hand out when guests arrive (who doesn’t love a frozen cocktail!) or how about as a takeaway treat for the trip home.  Either way, your guests are going to love your thoughtfulness during the warm sizzling months. Layering the popsicle flavors adds texture and interest, but if you’re in a hurry or need to make a big batch, go with just one flavor.  Simply leave out the alcohol for a mocktail version that everyone can enjoy.”

ingredients

Ginger Beer and Mint
–Alcoholic ginger beer
–Fresh mint

Orange, Vodka, and Coconut with Pink Grapefruit
–Orange juice
–Coconut milk
–Sparkling Pink Grapefruit Soda
–Vodka

Pink Grapefruit, Vodka, and Lemon Jelly with Orange
–Sparkling Pink Grapefruit Soda
–Lemon Jelly (1 x Packet)
–Orange juice
–Vodka

You will also need popsicle moulds and popsicle sticks (required if your mould set doesn’t come with plastic sticks or your making more popsicles than moulds).

Ginger Beer and Mint
1. Mix ginger beer with shredded mint.  Half fill moulds and let freeze for 2 hours.  Top up the moulds and leave to freeze for 24 hours.  By freezing in layers, the mint will form into two layers.
Orange, Vodka and Coconut with Pink Grapefruit
1. Mix orange juice and vodka to taste. A little vodka will go along way. Be mindful that too much vodka will mean the popsicles won’t freeze.  We used ~1 cup of orange juice to one and a half shots of vodka.
2. Fill the moulds about a third of the way with the orange and vodka mix and let freeze for 2 hours.  Fill another third with the coconut milk and freeze for another 2 hours.  Add the final layer of pink grapefruit soda and then leave for 24 hours to completely freeze (optional: add vodka to the pink grapefruit soda).
Pink Grapefruit, Vodka, and Lemon Jelly with Orange
1. Mix the pink grapefruit soda with vodka to taste
2. Fill the moulds about a third of the way with the pink grapefruit soda and vodka mix and let freeze for 2 hours.  After the two hours make the lemon jelly according to the packet directions.  After the jelly has dissolved fill another third of the mould with the jelly and freeze for another 2 hours.  Add the final layer of orange juice and then leave for 24 hours to completely freeze (optional: add vodka to the orange juice).
Tip – Use a form of tape (such as cellotape) to hold the sticks in place as the layers freeze.
