Banoffee Pie Granola Bars


When it comes to grabbing quick and easy breakfast, granola bars are the way to go. For those of us living such a busy lifestyle, on the run from one place to the next, whipping up a batch of granola bars can be such a lifesaver on a daily basis! Today, we’re thrilled to have Kristie from The Sweet and Simple Kitchen here sharing this incredibly delicious Banoffee Pie Granola Bars recipe!


I am so excited to be sharing this super simple recipe with you today, because not only do these granola bars make for an amazingly delicious breakfast or snack, but they also double as a super yummy dessert. Basically it’s like getting three meal options for the price of one!

This is a nice big recipe so you can easily serve up a couple slices for breakfast, pack a few leftovers along with you for an afternoon snack, and still have some leftover to reheat and serve warm with a scoop of vanilla ice cream for dessert.


But how do they taste you ask? Well to put it simply, they taste just how they sound… like a banoffee pie. Need I say more? The flavor of the caramelized banana combined with the toasty oats and the nutty pecans… It’s simply irresistible. If you are a banoffee pie fan, you are going to absolutely love these granola bars. What are you waiting for?


Banoffee Pie Granola Bars


2/3 cup butter

1 cup brown sugar

2 tbsp corn syrup

1 can condensed milk

1 banana, mashed

2 tsp vanilla

4 ½ cups large flaked rolled oats

½ cup shredded coconut

¼ cup flax seeds

1 cup pecans, chopped

1 ½ tsp cinnamon

1/8 tsp nutmeg

Pinch of salt


1. Preheat your oven to 350 degrees and line a 9×12 inch baking pan with parchment paper; set aside.

2. In a large bowl, stir together rolled oats, coconut, flax seeds, pecans, cinnamon, nutmeg, and salt.

3. In a saucepan, melt the butter over medium heat. Once the butter is melted, add in the brown sugar, corn syrup, condensed milk, and mashed banana. Cook over medium-high heat stirring constantly until caramelized and golden in color – this should take about 5-10 minutes.

4. Remove the pot from heat, stir in vanilla, and pour over the dry ingredients. Mix with a spatula until everything is evenly coated and then spread into the prepared pan. Use your hands to press the granola mixture into the edges of the pan – you want to pack it down nice and tight because this will help to ensure the granola bars don’t crumble when you cut them.

5. Bake in the center of your oven for 30 -35 minutes or until the edges and top are golden brown. Remove from the oven and set on a cooling rack to cool.

If you want to serve your granola bars in the traditional way, allow them to cool completely before cutting into 16 equal granola bars. Wrap in parchment paper and tie with a string if desired. Store in an airtight container for up to 1 week. However, if you are opting to go the dessert route with your granola bars, allow them to cool for 10 minutes before cutting and serve with a scoop of vanilla ice cream.
