We’ve been working on adding recipes to that collection so that we have a quick option to choose when weeknight dinners sneak up on us! Dinner can sometimes be an afterthought after a full day of work and school. And figuring out what everyone in the house is going to eat (and love) for dinner can be a challenge. But we recently found a new winner in our house, and I’m so excited to share it with you to try with your family!

Easy Dinner Recipes
If you know my style of cooking, then you know I’m all about easy. But I also want a great recipe that will bring the whole family around the dinner table. It can be so difficult, especially during the weeknights, to come up with a dinner plan, but My Food and Family’s recipe collection has been a lifesaver! All of the recipes are super simple to follow and easy to put together, and they utilize ingredients that are normally on my shopping list anyway! There’s no searching for random ingredients I’ve never heard of or used before.
I recently put together this Corn, Bacon and Potato Pie recipe from My Food and Family, and it was such a hit! Everyone around the table loved every bite of it. And the best part was that I could put it together in less than an hour! Seriously, it only takes 15 minutes to prep this recipe, with 40 minutes of cooking time. Talk about an easy recipe for a Sunday morning brunch or even for dinner! I love that it could work for so many meals and occasions.
Ingredients for Corn, Bacon and Potato Pie
Recipes that use ingredients that are simple to find or ingredients usually around the house already are hands down my favorite! For this Corn, Bacon and Potato Pie, all you will need is a ready-to-use refrigerated pie crust, eggs, KNUDSEN sour cream, ORE-IDA Potatoes O’Brien, KRAFT Cheddar & Swiss Cheese Deliciously Paired for Eggs, fresh corn, cooked OSCAR MAYER Bacon, and chopped fresh basil leaves. That’s it!
How to Make Corn, Bacon and Potato Pie
With simple ingredients at hand, this recipe couldn’t be any easier! Start by heating your oven to 375 degrees so it’s ready once your pie is prepped. Line a 9-inch pie plate with the refrigerated pie crust by following the directions on the package. Whisk the eggs and sour cream together in a bowl until blended. Add in the ORE-IDA Potatoes O’Brien, cheese, corn, bacon, and fresh basil. Mix the ingredients together, and then pour into the pie crust. Bake your pie for 40 minutes, or until the edges of your crust is golden brown and a knife inserted into the center of the pie comes out clean. Take your pie out of the oven and let it sit for 15 minutes before serving.
By mixing together potatoes, egg, and sour cream for this recipe, it comes out so perfectly moist and delicious. The sour cream adds such a great creaminess, with the potatoes adding texture. And of course, the kids always go crazy for bacon in anything! All sitting in a flaky pie crust, with fresh basil mixed in, it seriously is so SO good! I’m dreaming of having another slice right now.
