Here at BFFF, we’re loving everything being served up on ABC’s “The Chew” this summer. Whether they’re discussing a technique, doing a demo, or chowing down, the hosts of the hit talk show sure know how to make us hungry! We’ve got one last video clip from the show to share, and since we obviously had to end things on a sweet note, we’re telling you all about Carla Hall’s Strawberry Napoleon.
If you’ve never had a napoleon, now’s the time to make one. Not only is Carla’s recipe easy to follow and simply scrumptious, but it’s also a visually stunning dessert that’s fun to put together and perfect for summertime! A napoleon is a decadent treat made up of layers upon layers of puff pastry, pastry cream, strawberries and melted chocolate. Carla split up the tasks between the rest of the hosts assembly-line style. You can do this with your family or friends —what a great way to get everyone in the kitchen together!
To begin, brush your pastry dough with melted butter. You can either use store bought dough or make it yourself, whichever you prefer. Because it’s a stacked dessert, the pastry doesn’t need to rise too high, so roll it out pretty thin, about 1/8 inch, and dock it. The pastry bakes on a baking sheet lined with parchment paper for 10 minutes at 450 F.
While the pastry is in the oven, get to work on the strawberry mixture. Start by cutting the strawberries, then heat them in a pan and add some sugar and lemon juice. Finally, mash the mixture with a potato masher. The pastry cream is just as easy — simply add lemon juice and water to powdered sugar, being careful to add them in small increments. Remember, you can always add more liquid, but you can’t take it away! We don’t blame you if you try a small taste — after all, Clinton licked the whole whisk!
To create the top layer of the napoleon, take your baked puff pastry and dip it in the pastry cream. This is a great technique – instead of trying to frost it like a cake, the pastry just gets dunked right into the bowl! Pipe two rows of melted chocolate onto the pastry cream and make a pretty design using a toothpick. When the rest of the components are ready, start stacking! Alternate layers of strawberry and pastry cream between the puffed pastry.
