You can swap the almonds for macadamia or pine nuts, or add a teaspoon of lemon juice or zest to give it a little zing!”

Green Bean and Asparagus Salad



—A large handful of green beans

—A bunch of asparagus

—200 gm feta cheese

—150gm slivered almonds, toasted

—2 cloves garlic, sliced thinly

—2 tbsp olive oil


1. In a large pot of boiling water, blanch the beans and asparagus until they turn bright green (approximately 3 minutes). Remove from the water and set aside.

2. Place a large fry pan over medium to high heat . Once hot, add the olive oil.

3. When the oil has heated through, quickly fry the asparagus, beans and garlic until very lightly browned.

4. Remove from the heat and cool for a minute or two, then toss together with the crumbled feta and toasted almonds. Serve immediately.
