How to make Snow Cone Cupcakes

Looking for girly entertaining ideas for your next pool party bash? Or gearing up to plan a sweet April Fools joke?! Shock your guests with these incredibly easy snow cone cupcakes – you read that right, cupcakes that totally look like snow cones!!!

Snowcone cupcakes and I have been around the block together a time or two. I shared how to decorate light pink snowcone cupcakes back in 2012. I also shared these red, white, and blue patriotic cupcakes that were perfect for 4th of July – if I must say so myself! ;) When I noticed that Country Living Magazine featured my last batch, I felt inspired to make these again in another color! ;)

Rest assured, you can take MANY different shortcuts when making these cupcakes. From buying plain store-bought cupcakes to making your favorite cupcake recipe from scratch – you’re the cake boss! ;)

All you have to do is place your baked cupcake into a styrofoam snow cone cup, then top with a scoop of frosting and roll in sprinkles! Tip: be sure to freeze your frosting prior to scooping. You want your frosting to be a little softer than the consistency of ice cream. We looked all over town for the perfect ice cream scoop that was round enough to look like real ice cream. I ended up finding the perfect scoop from Smart & Final – of all places! ;) After adding your desired color of sprinkles on top, store your treats in the freezer until your bash!

Bake your cupcakes, or use store-bought. Place cooled cupcakes in “snow cone” cups.

Step 2
Make your buttercream frosting and put it in the freezer for 30-60 min. Make sure the frosting is nearly as frozen as ice cream so that it holds its shape.
Step 3
Using your ice cream scoop, place one scoop of frozen frosting onto your cupcake.
Step 4
Put your pink sprinkles onto a plate and roll your cupcake in the sprinkles until the frosting is fully covered.
Step 5
Add a pink straw.
