Mint Chip Frosting
Heather “Cupcakes” Saffer, Cupcake Wars Winner and lover of all things sweet, is here with a minty sweet frosting recipe from her new book, The Dollop Book of Frosting. This intro from Heather herself will convince you that this rich frosting is a must-make!
“Know what’s better than mint chocolate chip ice cream? This mint chocolate chip frosting. It’s creamy, it doesn’t drip down your hands, and it tastes just as great in a snowstorm as it does at the beach. I like to throw on my man-sized sweatshirt and fuzzy slippers, and curl up with a snack loaded with mint chocolate chip frosting. You don’t want to do that with your mint chocolate chip ice cream, do you? Just one more reason to fall in love with this mint chocolate chip frosting!”
–1½ cups butter
–1½ tablespoons pure vanilla extract
–3¼ cups powdered sugar
–Pinch of salt
–6 drops green food coloring
–1 cup Andes Crème de Menthe Thins candies, chopped
Yields: Frosts 1 trifle dish
1. In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy by mixing on low speed, about 2 minutes, until smooth.
2. Add vanilla and continue mixing another minute. Slowly add sugar and salt and beat until light and fluffy, about 3 minutes.
3. Add the chopped Andes candies and green food coloring, and whip for another 2–3 minutes until creamy and an even color.
