If you asked me to name the top three people I’d like to have lunch with, my list would be as follows: Nigella Lawson, Paula Deen, and Heidi from 101 Cookbooks. I always learn something new when I make my way through one of her recipes, and I feel like she is by my side every step of the way providing helpful hints, encouraging me to keep it simple, and providing me with a delicious reward at the end of all my hard work. Like all other recipes found on 101 Cookbooks, Heidi’s No Bake Chocolate Cake Recipe does not disappoint. The cake is incredibly simple, but I think in reality that is what makes it so good. Not only is it rich and chocolatey, but it’s creamy too. The chocolate is at the forefront of this recipe, but with every bite you get little notes of espresso flavoring and spice. It is, in a word, magnificent. With only 7 ingredients, two of which are optional, you taste every single ingredient in this cake, and I think that sometimes that is just what you need.
