Brunch isn’t complete without a good drink. The quintessential brunch cocktail is the Mimosa – a bubbly mix of champagne or sparkling wine and orange juice. But today, Caroline Souza of Sweet Caroline’s Corner is putting a fun twist on the traditional mimosa by trading out OJ for ripe peach puree and sweet nectar. Yum! Serve these sweet drinks at your next brunch, or even for an afternoon drink while soaking up the sun. Here is what Caroline has to say:
“Mimosa is a classic drink served at any brunch and, while it’s usually made with orange juice, the recipe that I’m sharing today gives this old classic a bit of a twist. The sweetness from the peach combines very well with champagne or sparkling wine and will satisfy everyone.”
(makes six drinks)
–2 cups peach nectar, chilled
–2 cups peach juice, chilled
–1 liter champagne or sparkling wine, chilled
1. In a pitcher, combine peach nectar, juice, and champagne or sparkling wine.
2. Pour into glasses and serve right away. Enjoy!
