An Easy Pickled Recipe
If there is one thing that Andy and I truly love, it’s a freshly grilled meal! Seriously we are all about grilling season! Actually grilling season doesn’t really even exist for us. It’s more of a year-round affair! ;) Especially living in California, the mild seasons make it easy to keep our obsession going! We truly can’t help it! For us, nothing beats some freshly grilled meat and veggies for a quick lunch or a delicious dinner. Through the years, we’ve definitely tried grilling a lot of different foods! Some have been complete successes and others not so much… ;) Even with all of our trial and error, one of our favorite grilling go-tos actually doesn’t get grilled at all! But trust me, it gets added to pretty much everything we grill! So today I’m sharing the recipe for our favorite grilled food accessory — pickled radishes!
Serving And Eating Pickled Radishes
Okay, okay so I totally know that a pickled radish on your plate might not sound like the best thing in the world. But I’m completely not joking here! Pickled veggies and pickled radishes in particular are completely amazing! When you pickle something, it gets this super salty and vinegary taste to it. They make for tasty little snacks, but are awesome paired with other grilled pieces! Andy and I usually add in our pickled radishes to grilled meat dishes. If you give pork or chicken a spicy marinade on the grill, then add these pickled radishes, you’ll have the perfect taste combo! Honestly at this point, if we grill any meat at all, having these pickled radishes on hand is basically a must for me! I definitely suggest that you try pickling any of your favorite veggies, but radishes are just made for pickling! Radishes are already pretty watery, so they easily absorb all of the pickling ingredients. Aka they get the perfect pickled flavor! Plus radishes are a super healthy choice, so there’s no need to feel guilty when you eat the whole jar. ;) Not that Andy and I have ever done that…;) All you have to do is give this quick, simple, and inexpensive recipe a try and I promise it’ll be one of your new favorites! It’s the best way to end your grilling season with a special twist! :)
How To Make Pickled Radishes
The best part about these yummy radishes is how easy they are to make. All you really have to do is add the radishes and pickling ingredients together, let them sit, and BOOM! Instant tastiness! The one trick to this recipe though is time! At minimum, anything that you’re pickling is going to need about four hours to sit before serving. But of course this comes with good news too! Instead of worrying about finding four hours of extra time on a busy weeknight, you can just make these radishes ahead of time. Plus the pickling ingredients mean that your radishes will be safe and ready to eat for weeks. We just make our radishes every couple of weeks, so we don’t have to worry about them and always have them ready to go! Whenever you do decide to whip up some of these radishes, you’ll only need about 30 minutes max. Not only is this recipe simple, but I bet most of the required ingredients are already in your house! You’ll need to combine some rice vinegar, sugar, water, and salt in a saucepan and then stir while it comes to a boil. Once the pickling sauce is done, make sure you give it about 15 minutes to cool off. In the meantime, you can slice up about 3 cups of radishes and add them to a mason jar with some garlic. Once the pickling ingredients are ready, you simply have to pour them over your radishes, and you’re all set! As a pro tip: Andy and I also like to add a little black peppercorn and mustard seed into the mason jar too. It adds just a little extra zing and bite to the final taste!
With only a few ingredients and a few hours of time, you’ll have the most amazing grilling side dish! Pickled Radish
Ingredients
- 3 cups sliced radish
- 2 cups unseasoned rice vinegar
- 1/4 cup water
- 1/2 cup sugar
- 1 tbsp kosher salt
- 1 garlic clove diced
- 1/2 black peppercorn optional
- 1/2 tsp mustard seed optional
Instructions
- Bring vinegar, sugar, and 1/4 cup water to a boil together in a medium saucepan over medium-high heat. Stir to dissolve sugar.
- Allow ingredients to cool for 15 minutes.
- Place radishes in a mason jar. Add your pickling liquid.
- Cover and chill at least 4 hours before serving. Enjoy!
