Roasted Pear Gorgonzola Salad

Growing up, I was never really a salad fan. It wasn’t until I reached adulthood that I began to appreciate the flavors that a mix of greens, fruits, vegetables, and add-ons could bring. This is why I love this Roasted Pear Gorgonzola Salad! The combination of mild, tangy, and fresh flavors really compliment each other. This light, yet filling salad, is perfect for a weekday lunch or great as a side for a weekend dinner.
ROASTED PEAR GORGONZOLA SALAD RECIPE
Serves two (double the recipe to serve more people)
Prep and Bake Time: 30 minutes
INGREDIENTS
-4 medium ripe pears (Bosc or Bartlett) halved
-3 tablespoons olive oil
-a sprinkle of sea salt
-2 cups spring mix salad
-2 cups kale and cabbage mix
-1/2 – 1 cup cherry tomatoes, halved
-1/2 cup crumbled gorgonzola cheese
-1/2 cup pecan halves
-balsamic vinaigrette (or raspberry merlot vinaigrette)
DIRECTIONS
1. Preheat oven to 400° F. Place halved pears in a baking dish, drizzling the olive oil, and sprinkling the sea salt over them. Bake uncovered for 25 minutes, occasionally basting the pears with the pan juices.
2. In large bowl, or two individual bowls, combine the spring mix, kale, cabbage mix, tomatoes, gorgonzola cheese, and the pecans. Toss to mix the ingredients.
3. Top the salads with the roasted pears. You can choose to top the salads with a pear half or dice them up into squares.
4. Drizzle vinaigrette on top of the salads and serve.
