Spend Summertime with “The Chew”


If you’ve been tuning into ABC’s “The Chew” this summer, you know that our favorite gang of chefs and health experts are doing things bigger and better than ever — which is why we can’t wait to share a clip from the hit show with you!

In our last post about “The Chew”, we wrote about chef Carla Hall’s scrumptious recipe for Summer Berry Pudding. This time, we thought we’d take things up a notch by sharing an entire summer menu! In this fun clip, chef Michael Symon offers tips on keeping grilled barbecue chicken juicy, healthy living expert and cookbook author Daphne Oz puts together an incredible grilled cantaloupe and vegetable salad, and Carla serves up a refreshing minted watermelon and cucumber punch.

Barbecued chicken is a summertime staple —and with Michael’s easy tips, you’ll never serve up dry chicken again. Michael suggests putting the chicken skin side down on the grill, basting it with sauce, and closing the lid (no flame-ups here!). One last baste before turning off the heat ensures the chicken is coated with flavor, and using a meat thermometer will help you know when to remove the chicken from the grill (it’s fully cooked at 160 degrees). After taking it off the grill, let the chicken rest 5-10 minutes before serving for a delicious, juicy cut of meat.

Daphne’s salad pairs perfectly with the chicken — both the homemade salad dressing and the marinade incorporate a dash of coriander. Daphne tells us that making homemade dressing — this one is a mix of red wine vinegar, shallots, Dijon mustard, coriander, honey, and olive oil — cuts back on the sugar and sodium you’ll find in bottled salad dressing. When the dressing is ready, toss chopped romaine with grilled veggies and slightly charred cantaloupe before adding fresh cucumbers, cherry tomatoes and avocado.The best part of this veg-heavy salad? It’s less than $2.00 per serving!

Last but not least, Carla creates a punch that has our mouths watering and our eyes boggling. We’re in love the minute she mentions using peeled and frozen cucumbers as ice cubes — pretty genius, if you ask us! To make it, simply mix together cucumber water, mint leaves, watermelon juice and lime juice with mint simple syrup (equal parts water and sugar, flavored with mint) and sparkling water. Pour it into fun glasses and serve over the cucumber ice cubes. If you want to de-virginize this punch, take a hint from Clinton Kelly and add a little splash of liquor! This meal is perfect for backyard summertime fun.
