Copycat Cracker Barrel Hashbrown Casserole

- 32 ounces shredded hashbrowns, defrosted
- 1/2 cup melted butter
- 1 can cream of chicken soup (10.5-ounce can)
- 1 cup chopped onion
- 1 clove garlic, minced
- 2 1/2 cups shredded colby jack cheese
- Chopped parsley (optional, for garnish)
Preheat the oven to 350F.
In a large bowl, mix together hashbrowns, chopped onions, minced garlic, melted butter, 1 cup shredded cheese, sour cream, and one can of cream of chicken soup.
Add mixture to an oiled 9x13 pan and spread into an even layer. Top with remaining cheese and bake for 40 minutes.
Sprinkle with chopped parsley and serve.
