These easy Groundhog Day pancakes turn a regular breakfast into a fun, memorable surprise using simple pancake mix and everyday toppings you already have at home.
Prepare the pancake mix according to the directions on the box.
Heat a nonstick pan or griddle over medium heat.
Cook 3 regular-sized pancakes for the face, then make 3 smaller circle pancakes for the ears.
Let pancakes cool slightly before decorating.
Cut small pancake circles in half and use them as the groundhog’s ears, placing one half on each top side of the larger pancake to create the face.
Decorate the groundhog’s face by adding candy eyes for the eyes, a chocolate chip for the nose, banana slices for the cheeks, and mini marshmallows for the teeth.
