Ingredients
Two 16oz containersGrillo’s Pickle Chips
1½cupsNonfat Greek Yogurt
8ozWhipped Cream Cheese
½cupSour Cream
2TablespoonsChopped Fresh Dill
3/4cupShredded CheeseI used colby jack
one1 ozPacket Seasoning Powder Ranch
Optional Mix-Ins (Not used in my version): These 3 optional mix-in ingredients are part of the original viral Grillo’s pickle dip, but I left them out to keep my version simple and not spicy. If you want to add extra flavor or a little heat, you can totally mix these in!
3/4cupCrumbled Bacon
1smallShallot, diced
1Jalapeno, diced
Instructions
Drain the pickles, and dice into small pieces.
In a large mixing bowl, mix together all ingredients including optional mix-in's if using.
Add the finished dip back into the empty pickle jars.
Refrigerate for at least 30 minutes, or longer for flavors to set. Remove from the refrigerator and give the dip a good mix before serving.
Serve with kettle chips or veggies.
Notes
If you have time, let the pickle dip chill in the fridge for about 6 hours before serving. It makes a huge difference in flavor and is how the viral pickle dip really gets that wow factor.
