- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 1 cup coconut cream
- 5 oz pineapple Greek yogurt
- 8 oz cream cheese, softened
- juice of half a lime, plus zest for garnish
- 2 large pineapples
Instructions
- In a large bowl, beat the whipping cream and powdered sugar with a hand mixer until stiff peaks form, about 3-4 minutes.
- In another bowl, beat the coconut cream, pineapple yogurt, softened cream cheese, and lime juice with a hand mixer.
- Fold the whipped cream into the cream cheese mixture and stir until combined.
- Refrigerate for at least an hour for the best flavor and texture.
- Cut the bottoms and tops off each pineapple, then cut vertical slices from the pineapple all the way to the core. Cut each vertical slice in half width-wise as well as length-wise, then use a crinkle cutter to cut out fry shapes. Note: Make sure to cut the pineapple fries thick enough so they will not break when dipping.
- Spoon the coconut cream dip into a small bowl, then arrange the pineapple fries on a plate around the dip. Optional: Top the coconut cream dip with lime zest.
