Sweet Potato Casserole Recipe
For this recipe, you will need 2 tablespoons unsalted butter, 2 tablespoons brown sugar, cinnamon, salt, 1/4 cup half and half, 1/2 teaspoon pumpkin pie spice, and 3 29oz cans of sweet potatoes. For the topping you will need 5 tablespoons unsalted softened butter, ¼ cup all purpose flour, 1/8 teaspoon salt, ¼ cup brown sugar, 3 cups mini marshmallows, ½ teaspoon ground cinnamon, and ½ cup chopped pecans.
How to Make a Casserole
First, preheat your oven to 375°F. While the oven is preheating, mash the sweet potatoes and add butter, half and half, cinnamon, brown sugar and salt to the potatoes and mash until smooth. Then, transfer the mashed potatoes to casserole dish and heat the casserole dish with sweet potato mixture until it is warm. While the sweet potato mixture is heating up, you can make the topping! Get a medium bowl and put in the butter, brown sugar, flour, cinnamon, salt, and pecans, and stir to combine. Take sweet potatoes out of oven and top the mixture with half the marshmallows, then the streusel, and then more marshmallows. Place the dish back into the oven for 10 minutes, until the marshmallows begin to brown. Make sure you keep an eye on the dish and be careful not to burn the marshmallow! Once the marshmallows are slightly brown, it is ready to be served!
