Can you believe it’s already summer?! Spending the days outside, soaking in the sun, watching the kids play in the backyard and enjoying themselves — it’s one of the best times of the year! Especially as school just wrapped up, it’s time to party over here! And this waffle ice cream sandwich recipe might just take the cake! Made with fresh waffles, your favorite ice cream, and colorful sprinkles, I’ve been so excited to share this recipe with you!

Claire has been on a waffle kick recently, so I wanted to make them more special for her! I love how easy this recipe is, and it can be made into a fun activity for the kids to celebrate a great day. These sandwiches are made in no time, which is great when you are busy with summer activities and want a quick treat! Or, turn it into a project the kids can help with, even letting them pick out their favorite sprinkles to decorate!

Ice Cream Sandwich Ingredients

All you need for the recipe is waffles, your favorite sprinkles, and your favorite ice cream! Seriously, that’s it! I like to use vanilla ice cream, but you can use any flavor you’d like!

How to Make Ice Cream Sandwiches

First, make your waffles, whether you’re using store-bought or making them at home in a waffle maker. Let your waffles cool, and get your ice cream out. Using an ice cream scoop, add scoops of ice cream on one waffle, and top with a second waffle to make a sandwich. Push down until some of the ice cream comes out the side. Then, dip the sides in sprinkles until it’s completely covered. It’s that easy!

Ingredients 

  • Waffles, either store-bought or homemade
  • Ice cream of your choice
  • Sprinkles

Instructions 

  • Make your waffles, whether you're using store-bought or making them at home in a waffle maker.
  • Let your waffles cool, and get your ice cream out.
  • Using an ice cream scoop, add scoops of ice cream on one waffle, and top with a second waffle to make a sandwich. Push down until some of the ice cream comes out the side.
  • Dip the sides in sprinkles until completely covered. 
  • Dive in right away, or put ice cream sandwiches in the freezer until ready to enjoy.
