I’ve been around the block with ice cream sandwich cakes… there’s one in my cookbook and I also made another version for 4th of July too!

But this summer, I knew I wanted to create a NEW flavor for you guys… so here we are. And let me tell you, it’s OFF the charts delicious!

Meet the Newest Ice Cream Sandwich Cake on the Block

So here we have it… This banana split cake is everything you love about a classic banana split, layered into the easiest ice cream sandwich cake ever.

I am literally craving another bite as I write this blog post… It’s sooooo good!

What I love most about this recipe is that the base is made with Neapolitan ice cream sandwiches, so every bite hits a little differently.

You get chocolate, vanilla, and strawberry all in one dessert… which is like the three musketeers of best flavors! It’s such a fun twist on a classic ice cream cake made with ice cream sandwiches.

Also, just a heads up… a little goes a looong way.

This is a rich, layered dessert with two full layers of ice cream sandwiches, so it definitely feels indulgent.

Ingredients

  • 24 ice cream sandwiches (I used Neapolitan)
  • 1 (16 oz) container Cool Whip
  • 2 bananas, sliced

Toppings:

  • Chocolate syrup
  • Caramel syrup
  • Chopped nuts
  • Crushed pineapple (drained)
  • Strawberry topping
  • Maraschino cherries
  • Sprinkles

How to Make Banana Split Ice Cream Cake

Start by adding a single layer of ice cream sandwiches to the bottom of a 9 x 13-inch baking dish. You can cut them to fit if needed.

Spread half of the Cool Whip evenly over the ice cream sandwiches.

Top with chocolate syrup, caramel syrup, sliced bananas, crushed pineapple, strawberry topping, and chopped nuts.

Add a second layer of ice cream sandwiches, followed by the remaining Cool Whip.

Drizzle more chocolate and caramel syrup over the top, then finish with maraschino cherries and sprinkles.

Place the cake in the freezer for about 2 to 3 hours, or until fully set.

Slice into squares and serve.

Storage Tips

Store this no bake banana split cake covered in the freezer until ready to serve.

You can pre-slice it to make serving easier

Best enjoyed within 2 to 3 days for the freshest texture
